A Short History of Ale Brewing

No one knows for sure when the first fermented beverage was made, possibly by divine accident. We do know that Egyptians, Mesopotamians and Aztecs drank beers, meads and ciders. Medicinal and spiritual properties were revered by many and abused by some. Some things haven't changed.

The process of bread and beverage making was not understood , and was considered very magical. In Britain yeast and fermentation were referred to as God is Goode. Today we understand more about yeast and fermentation, but our understanding only reinforces what a magical process it is! It's not surprising that recently the creation of fine fermented beverages has become known as Craft Brewing.

As the centuries rolled by and brewing became an art form, brew masters became powerful and were respected for their talents. Like many good things this art lost something in commercialization. Commercial beverages don't have much soul. After you've read this hopefully you can recover some of this lost art. There are hundreds of styles of beers, wines and meads, with varieties of styles limited only by our imagination. With the renewed interest in home brewing supplies and tools are available at reasonable prices almost everywhere. Since 1979 it has been legal to make up to 200 gallons of beer per year per household as long as you don't sell it. The law states you may take it just about anywhere or give it away for sampling.

The best beers, ciders, meads and wines are made in the company of good friends. Handle and smell the raw ingredients. Taste them, let them speak to you about the fine things to come. These things grew from our Mother Earth and you must have a feel for Her gifts if you are going to make great brew. It doesn't take long to learn to know good healthy ingredients from old, stale or over processed ones.

The ingredients of friendship, laughter and love can not be bought, but are the most important ones of all. Making these wondrous brews alone is almost as bad as drinking them alone. Sharing a previous batch will enhance the celebration of brewing. The number one rule of home brewers is Relax, don't worry, have a home brew.

Pay attention to details. Brewing is easy, but remember the yeast is alive and will respond favorably if conditions are right. In five to ten days a society of billions of yeast plants will be born, live their lives and die. Be good to the little yeasts, they are also Her children.

On a final note:

These beverages are best used in the spirit of their making. Share with friends, use in celebrations or have one to give thanks at your evening meal. Pour into a real glass or mug., watch the bubbles, smell the aromas. Hold it up to the light and enjoy the color. Think of the love and laughter that went into the making, then take the first sip and give thanks.

* Never underestimate the power of these brews, and I am not talking just about alcohol.
* Never drink enough to harm yourself or others.
* Never offer brews to anyone with an intolerance to alcohol either emotional, physical or spiritual.
* Moderation in all things, including moderation.
